Learn to make fresh pasta with your own hands and watch the pizza being prepared together with Maestro Francesco Bologna or one of his students. A unique opportunity to discover the secrets of the art of pizza directly from one of the most internationally recognized masters.

After renting your bike, you will download the GPX route and choose the path that best suits your abilities from the following options:
– Family Experience: Easy route, suitable for everyone.
– Adventure: More challenging route, for those who love adventure.
– Challenge: The most difficult route, for experienced cyclists.
The bike can be returned the following morning by 9:00 a.m. at no additional cost. GPS rental is recommended to help you navigate more easily and can be picked up directly at Bike It Bellagio.

Meet Maestro Francesco Bologna.
Francesco Bologna is a recognized professional whose passion for the world of pizza and baking began at a young age. After graduating in 2010 from the Istituto Tecnico dei Servizi Alberghieri e Ristorativi V. Titone in Castelvetrano, he continued his journey through internships and collaborations in renowned luxury hotels, working alongside Michelin-starred chefs.
Specializing in the art of gourmet pizza and alternative doughs, Francesco Bologna has refined a technique that combines craftsmanship, creativity, and a deep knowledge of raw ingredients. His dedication led him to establish an artisanal production workshop, where excellence products are created, including bread, pizza, pinsa, pastries, and large leavened baked goods — all made with high-quality ingredients of Italian origin.
In May 2025, Francesco Bologna, master pizzaiolo, was ranked among the 100 best pizza makers in the world according to the Best Pizza Awards.
Francesco Bologna è anche il fondatore dell’Accademia Francesco Bologna, un’istituzione che forma nuovi talenti nel mondo della ristorazione. L’Accademia offre percorsi formativi in pizzeria, panificazione, pasticceria, cucina e mixology, unendo teoria e pratica per creare professionisti completi.
In 2023 alone, the pizzeria and baking sector trained over 150 students, and the Accademia Francesco Bologna is continuously expanding, with new locations in Italy and abroad planned for 2024. Francesco’s philosophy is based on learning by doing, offering a training experience that blends tradition and innovation.
